Nicolas Viollet, creator of the Amboise Confectionery Conservatory, was recently admitted to the French Academy of Chocolate and Confectionery. With the idea of ​​perpetuating this traditional profession.

Nicolas Viollet comes from a generation of confectioners; his grandfather and father already practiced this profession. Since 2021, he is the founder and general director of the Conservatoire de la Confiserie, located in the Bout-des-ponts district, in Amboise.
