Amboise: Traditional sweets made in public

at the Confectionery Conservatory

Every day, Nicolas Viollet makes some of his traditional sweets in public at the Conservatoire de la confiserie in Amboise.

A powerful citrus aroma escapes from the vat of liquid sugar. The intense orange coloring of the still hot mass which cools on the table announces the flavor  : These are orange cartons that Nicolas Viollet and his assistant, Marine, are making.
